This cool pale green juice exudes summer and sunshine! Just like a mojito it is sweet, tart and minty- the perfect combination for a hot summer night. This is a great mocktail option for non-drinkers of all types or a refreshing juice when you’re on the go on a hot day. Enjoy!
Honeydew Kiwi Mojito Juice
2 peeled perfectly ripe kiwis (this is important, if the kiwis aren’t ripe enough the juice will be sour)
1 peeled lime
1 1/2 C peeled seeded ripe honeydew
1/2 C cucumber
Fresh mint
In a juicer, juice the kiwis, lime, honey dew and cucumber. Strain through a sieve, if desired. Meanwhile add ice and fresh mint to a martini shaker. Pour the juice into the shaker and shake well. Pour into martini glasses and garnish with fresh mint. Enjoy!
