Thai Noodle Salad

I have said it before many times, but if your salad is boring, you’re doing it wrong.  This flavor-packed Thai noodle salad is sooooo good!  In fact, a dear friend and colleague of mine told me that she can’t stop thinking about it since she had it for lunch and begged for the recipe.  My Thai Noodle Salad has tons of flavour, texture, and kick while being substantial enough to eat as a full meal.  If you want, especially if you are paleo/primal, you could also add cooked chicken, steak, or shrimp for extra protein.

Thai Noodle Salad

2 medium zucchinis, spiralized and drained (check out my foolproof technique for perfect zucchini noodles here!)

6-8 large carrots, spiralized or sliced with a julienne slicer

1 red pepper, julienned

1 yellow pepper, julienned

2 cups of red cabbage, julienned

1 cup sugar snap peas, chopped

 

Garnish:

2 Tb chopped chives

1/4 C fresh cilantro or parsley (optional)

1/4 cup chopped peanuts

Bed of baby spinach

 

Thai Salad Dressing

Thai Peanut Noodle Sauce – recipe here

2 Tb MCT oil or extra virgin avocado oil

2 Tb warm water

 

 

In a large bowl combine all of the salad ingredients.  In a high-speed blender combine all of the dressing ingredients and blend until smooth.  Adjust seasoning and spice level to taste and pour over salad.  Toss salad well until evenly combined and all of the ingredients are lightly coated in dressing.

 

Arrange a bed of baby spinach on a serving platter and top with the salad.  Garnish with chopped chives, parsley/cilantro, and chopped peanuts if desired.  Enjoy!
