Skinny on Sweet Potatoes

These sweet, vibrant starchy veggies are a nutrient powerhouse! Loaded with beta carotene (437% of your daily value in 1 cup of cooked sweet potatoes), vitamin C and manganese they are an excellent immune and beauty food. They are an excellent source of slow burning carbohydrates, mood-boosting tryptophan and are naturally gluten-free.

Steam, bake or grill your sweet potatoes or dehydrate raw sweet potatoes with some herbs and olive oil to make healthier fries.  Or throw them into your favorite everyday dishes, such as Sweet Potato and Avocado Frittata.  Just make sure you eat your sweet potatoes with a little bit of healthy fat– such as a drizzle of olive oil, raw pesto or some fresh avocado so you can absorb all of the many nutrients they contain.
