This sweet potato soup has all the elements of comfort food: smooth creamy texture, warm rich spices, lots of flavor and satisfying, but it is so much healthier than most creamy soups, is vegan and is quick and easy to make! I love this soup in the fall and winter with a spinach or massaged kale salad on the side. Perfect, easy, everyday comfort food for real people. Depending on what you have on hand, an equal amount of peeled and seeded chopped butternut, acorn, pumpkin or hubbard squash would all work well too instead of sweet potato.
Silky Sweet Potato Soup
2 tsp coconut oil
1 medium onion, diced
1 cup celery, diced
1 cup carrots, chopped
2 cloves of garlic, minced
2 large sweet potatoes, peeled and cubed (about 4-5 cups)
2 C cauliflower florets
1 L low sodium, gluten free and MSG free vegetable broth
2 bay leaves
1/2 tsp dried ginger
1/2 tsp ground cinnamon
1/4 tsp cumin
1/8 tsp nutmeg
Himalayan pink salt and black pepper to taste
2 Tb B grade maple syrup
400mL fresh coconut milk or BPA-free can of light coconut milk
Optional Garnish: chopped seeded tomato, green onion and red pepper
In a large soup pot melt the coconut oil over medium heat. Add the onion and saute until just translucent, about 3-5 minutes. Add the celery and carrots and saute another 3 minutes. Add the garlic, sweet potatoes, cauliflower and vegetable broth. Stir well and bring to a simmer.
Add the bay leaves, ginger, cinnamon, cumin and nutmeg. Season to taste. Stir well and allow to simmer uncovered until vegetables are fork tender, about 20-25 minutes. Once vegetables are soft, remove the bay leaves and discard. Remove from heat. Using an immersion blender (be careful as it is very hot), puree the soup until completely smooth, may be very thick. Add the maple syrup and coconut milk and return to medium-low heat. Return to a simmer, adjust seasoning to taste and serve. Gently sprinkle with garnishes if desired. Enjoy!
