Raw Turtles

Happy Valentine’s Day!  What better way to celebrate love than with gooey salted caramel, silky chocolate, and buttery pecans?  Commercial turtles are full of refined sugar and poor quality heated fats, but these quick and easy homemade raw turtles are vegan, paleo, gluten-free and made from strictly clean, whole food ingredients.   And really, what is a better way to show your affection than to give homemade turtles, made with love, to that special someone and your family, friends, and colleagues?  Enjoy!

Raw Turtles

1 batch of Raw Salted Caramel, slightly chilled to a thickened, but not hard consistency

1 batch of Raw Dark Chocolate, warmed in the dehydrator to a melted chocolate consistency

1 C raw pecan halves (feel free to mix it up and try other raw nuts or seeds)

 

Line a large baking sheet with parchment paper or Silpat.  Place two pecan halves side by side on the lined baking sheet.  Repeat with the remaining pecan halves, leaving at least 1.5 inches of space between each set.  Drizzle 1 teaspoon of the salted caramel onto each set of pecan halves.  Refrigerate about 20 minutes, or until set.  Drizzle dark chocolate over each caramel cluster to coat.  Chill again until set.

 

To serve, take turtles out of the fridge at least 20 minutes before serving to allow the caramel to soften (it hardens when chilled).  Enjoy!
