Raw Salted Caramel

This raw salted caramel is omg, orgasmic, serve it to company good.  No one will know that it isn’t traditional caramel made out of sugar, high fructose corn syrup, butter and cream.  My favorite way to enjoy this is with tart Granny Smith apple slices or drizzled warm, straight out of the food processor over raw vanilla banana ice cream.  It’s so good!

 

 

Raw Salted Caramel

1/3 C + 1 Tb extra virgin coconut oil

1/3 C raw cashew butter (raw almond, hazelnut and macadamia nut butters are amazing too and give slightly different flavors.)

1/3 C B grade maple syrup

2-3 large extra-fresh pitted medjool dates

1 tsp Ground Vanilla Bean Powder

1/2 tsp cinnamon

1/2 tsp fine Himalayan salt

 

In a food processor add all the the ingredients and pulse until well combined.  Turn the food processor on high and mix for 3-5 minutes, or until a slightly warm, rich, creamy and sticky caramel consistency.  Do not overmix or it will seize up and begin to separate.

Raw salted caramel apples you can make in 10 minutes (without the pot of boiling sugar or huge mess!)

Serve immediate with fresh fruit (apples, bananas, pineapple and pears work well) as a dip, make mini raw caramel apples, drizzle on banana ice cream or any favorite raw dessert.

*If you want just a regular caramel cut the salt down to 1/4 tsp.
