Everyone enjoys a good crunchy savory snack every now and then, but most easily available choices are less than healthy options. Kale chips are a delicious and much healthier alternative and provide a fantastic crunch! They are quick and easy to make at home and can be made in endless flavor combinations. These are my pizza flavored kale chips, combining two of the most commonly craved flavors into one healthy snack. Enjoy!
Raw Pizza Kale Chips
Sauce:
3/4 C raw sunflower seeds, soaked overnight, rinsed and drained well
1/4 C raw hemp hearts, soaked overnight, rinsed and drained well
1/4 C sun-dried tomatoes, soaked overnight, rinsed and drained well
1 large Roma tomato, seeded, coarsely chopped and patted dry with a paper towel
1 small shallot, coarsely chopped
1 clove garlic
1 1/2 tsp extra virgin olive oil
1 tsp Italian herbs (choose a blend without added salt, oils or MSG- 100% herbs)
2 tsp dried oregano
3 tsp dried parsley
3 tsp dried basil
Pink Himalayan sea salt and fresh black pepper to taste
1/4 C Nutritional Yeast (optional)
Chips:
1 large bunch of kale, washed and dried completely and torn into bite-sized pieces
In a food processor or high-speed blender such as the Vitamix Professional Series 750 Heritage Collection (New Model 2016), add all of the sauce ingredients and blend until smooth. Taste for seasoning and adjust to taste as desired.
Place the kale into a large mixing bowl and pour the sauce mixture over the kale and mix well with clean hands until well combined.
Layer the kale in a single layer on 2-3 Teflex-lined dehydrator sheets and dehydrate at 115°F for 8-10 hours, or to the desired level of crunchiness. My favorite dehydrator is the Excalibur 3526TB 5-Tray Dehydrator with Timer, Black. Enjoy!
