Raw Coconut Milk

Coconut has so many fabulous health benefits and has become such a popular ingredient lately.  Unfortunately commercial coconut milks that you can buy at the supermarket are highly processed, often full of added sugar and additives like carrageenan and most certainly are not raw.

Fresh, raw coconut milk couldn’t be more delicious or easier to make! You can use it in smoothies, lattes, in tea, desserts, on cereal or straight up and add any flavorings you like.  You don’t need any expensive equipment either, just your blender and a nut milk bag!

Coconut

Raw Coconut Milk

1 cup fresh young Thai coconut meat, rinsed

3-4 cups filtered water or coconut water

Pinch of fine pink Himalayan rock salt

Combine all ingredients into the blender (start with less liquid at first and add more as needed to reach desired consistency) and blend together until smooth.  Pour the blended mixture through the nut milk bag into a large bowl or pitcher and squeeze thoroughly until all of the milk has been removed from the dry coconut pulp in the bag.  Serve immediately.  Enjoy!

**  Be creative!  Add vanilla bean powder, cacao/carob powder, cinnamon and/or a couple of fresh pitted medjool dates to taste for a sweet treat.
