Fast Facts about Green Beans

5 fast facts about green beans in honor of my very adorable five year old niece who infamously said “I eat beans because my (nick) name is Beans!”  She is certainly full of beans and green beans are her favorite vegetable.

  • A serving of green beans contain 20% of your daily vitamin C, 18% of your vitamin K and almost 14% of your daily vitamin A (beta carotene)

 

  • Loaded with antioxidants including a variety of flavonoids and carotenoids including anti-inflammatory quercetin for allergies and lutein for eye health.

 

  • Green beans are very anti inflammatory and help in the prevention of chronic lifestyle diseases such as heart disease and type II diabetes

 

  • Calorie for calorie green beans have almost as much omega 3 as walnuts

 

  • How to enjoy these staple vegetables? Lightly steam them until tender crisp and either eat them plain or toss with fresh lemon, extra virgin olive oil and fresh herbs; snack on them raw with your favorite healthy dip such as hummus, salsa or fresh guacamole; toss into stir-fries, pasta sauces, omelets, salads (raw or blanched) such as the classic French Nicoise salad, or curries. The possibilities are endless.
