Salad gets such a bad rap as being boring, tasteless and unsatisfying, but that couldn’t be further from the truth! This fresh, satisfying salad combines all of the flavors and brightness of summer. Sweet juicy nectarines, silky avocado, peppery arugula, and the sharpness of lime all blend together to make this vibrant and delicious summer salad.
This salad is actually my take on my dear friends Ashley (check out her incredible original Sweet Guacamole Salsa recipe on her amazing clean eating blog Bodhi Life) and Susan’s original creations. It is loaded with antioxidants, healthy fats, and skin-boosting nutrients to help your skin glow from the inside out. I have also had the feedback that this salad is great with grilled chicken or crumbled feta to add more protein for a more substantial entree. Enjoy!
Get the Glow Summer Salad
3 large nectarines or peaches, diced
2 ripe avocados, diced
3 green onions, diced
1 large heirloom tomato, seeded and diced
1 cup cucumber, diced
2 Tb fresh mint, chiffonade
2 Tb fresh basil, chiffonade
Juice of 1 lime
3 Tb extra virgin olive oil
Himalayan pink salt and fresh pepper to taste
1 1/2 cup fresh arugula
4 cups mixed baby greens
In a large bowl combine the nectarines, avocado, green onions, tomato, cucumber, mint, basil, lime juice, and olive oil. Gently toss and season to taste, adding more seasoning, herbs, lime juice or olive oil as needed. On a large serving, platter, arrange a bed of arugula and baby greens. Top with the nectarine and avocado mixture. Enjoy!
